Vanilla Frozen Yogurt with Blackberry Lime Sauce



I have been wanting to try this recipe for a long time. Ever since I saw it posted on 101 Cookbooks I have had it in the back of my mind. Now that the weather has finally started to warm up a bit I decided it was time to pull out the ice cream maker and satisfy my curiosity. I'm glad I did because this frozen was delicious. It was rich and incredibly creamy. The blackberry lime sauce compliments the frozen yogurt perfectly, with just the right amount of tartness to balance out the sweet.

I am not sure what it is like where you live but where I live there are tons of frozen yogurt joints popping up all over the place. Frozen yogurt must be the hip thing right now so I say embrace the trend and make yourself some tasty frozen yogurt today.

Vanilla Frozen Yogurt
3 cups Greek Yogurt (I used the full fat kind)
3/4 cup Granulated Sugar
1 teaspoon Vanilla

Mix all of the ingredients together until the sugar dissolves. Chill in the refrigerator for an hour. Pour into your ice cream maker and freeze mixture according the manufacturer's instructions.

Blackberry Lime Sauce 
1 1/2 cups Blackberries
3 tablespoons Granulated Sugar
1 tablespoon Cornstarch
1/3 cup Water
1 teaspoon Lime Juice (or to taste)

Put the blackberries, sugar, cornstarch and water into a medium sauce pan. Heat mixture over medium heat. Stir constantly and a use wooden spoon to help breakup the blackberries.  Once blackberries are broken down place a fine mesh sieve over a bowl. Pour mixture through sieve and use a rubber spatula to push as much of the mixture through the sieve as possible. Discard seeds and pulp and stir the lime juice into the stained sauce. Pour over frozen yogurt and enjoy.

Makes 3/4 cup sauce
